French Onion Soup with Gratinated Cheese Bread

It has always been said that bread is not thrown away. Traditionally, bread that has become hard has been used in soup, for example. It was seasoned with whatever was available in the pantry – in France onions and cheese, among other things. The result is this spicy onion soup with golden-brown cheese toast from the oven.

Ingredients:

    • 800 g onions
    • 4 tablespoons of olive oil
    • 4 cl Pernod
    • 1,2 l meat or vegetable broth
    • Salt
    • Pepper
    • 8 white bread slices (maybe older)
    • 80 g grated Gruyère or Raclette cheese
    • optional: a shot of champagne, other sparkling wine or white wine

    This aromatic, creamy cauliflower broccoli soup is a real treat. A simple and very tasty recipe.

    Ingredients:

    • 500 g broccoli
    • 1 (about 500 g) small cauliflower
    • 2 teaspoons vegetable stock
    • 1 tablespoon of flaked hazelnuts or almonds
    • 2 slices of toast bread
    • 1 tablespoon butter/margarine
    • 2-3 tablespoons (75 g) sour cream or crème fraîche
    • salt, pepper, nutmeg

    Preparation:

  • Broccoli und Blumenkohl putzen, waschen und in Röschen teilen. Dicke Stiele schälen und grob würfeln
  • Gesamten Kohl in ca. 600 ml kochendem Wasser mit Brühe zugedeckt 10-12 Minuten garen. Nach ca. 5 Minuten einige Röschen herausheben
  • Nüsse ohne Fett rösten, herausnehmen. Toast in Stückchen zupfen oder schneiden und in heißer Butter goldbraun rösten. Nüsse untermischen
  • Die Suppe fein pürieren. Schmand einrühren und alles abschmecken. Broccoli- und Blumenkohlröschen mit erhitzen. Die Suppe mit Nuss-Croûtons anrichten

  • 800 ml vegetable broth
  • 1 tablespoon salt
  • 1 tsp white pepper from the mill
  • 1 tablespoon lemon juice
  • 2 slices of whole-grain toast
  • 2 tablespoons chopped chives

    In France, onion soup is simply a starter. The original homemade onion soup is prepared with sherry and white wine. But don’t worry; you won’t get drunk from the vegetarian onion soup, because the alcohol content is reduced to a minimum by cooking.

    Ingredients:

    • 1200g onions
    • 1-liter vegetable stock
    • Olive oil
    • 1 shot of sherry
    • 1/4 liter white wine
      Merric salt
    • freshly ground pepper
    • Baguette
    • grated gouda

    Preparation:
    Peel the onions and cut them into small pieces. Heat a pot with olive oil and fry the onions for about 3 minutes until golden brown. Add the vegetable stock and white wine and bring to the boil once. Cover and cook on low heat for 15 minutes.
