In France, onion soup is simply a starter. The original homemade onion soup is prepared with sherry and white wine. But don’t worry; you won’t get drunk from the vegetarian onion soup, because the alcohol content is reduced to a minimum by cooking.
- 1200g onions
- 1-liter vegetable stock
- Olive oil
- 1 shot of sherry
- 1/4 liter white wine
- freshly ground pepper
- grated gouda
Peel the onions and cut them into small pieces. Heat a pot with olive oil and fry the onions for about 3 minutes until golden brown. Add the vegetable stock and white wine and bring to the boil once. Cover and cook on low heat for 15 minutes.
In the meantime, cut the baguette into slices and top with grated cheese. Preheat the oven to 200 degrees. Now put the baguette slices in the oven and bake for about 10 minutes until the cheese has melted.
Back to the onion soup. Now season the soup with a dash of sherry and add some salt and pepper to taste and cook for another 5 minutes.
Divide the French onion soup into deep plates and decorate with the baguette slices with cheese on top of the soup. Serve with a medium-dry white wine and some white bread. Bon appetit!
